Meat

The star ingredient of sobrasada is pork, but not just any pork. Noble cuts are chosen: high-quality lean meat, from parts such as the loin, shoulder, or ham. This meat is finely chopped to achieve a smooth, homogeneous texture free of tendons or impurities.

The proportion between lean meat and fat is key. The fat (usually bacon or white pork belly) is what gives it that point and that flavor that we like so much.

When it comes to Iberian sobrasada, the difference in flavor is noticeable. Iberian pork has more fat infiltration, a deeper flavor, and a very characteristic aroma.

Spices

Paprika gives it that vibrant red color and also acts as a natural preservative, thanks to its antioxidant power. To this, sea salt, pepper, and, on some occasions, a touch of oregano or nutmeg are added, depending on the producer.

Casing

The mixture is stuffed into natural casings, generally from pork. This is an important detail; the casing allows for slow and uniform curing, letting the sausage breathe. It also gives it that characteristic shape that varies according to the caliber. From the classic horseshoe-shaped sobrasada to the larger and more robust cular sobrasada.

During the curing process, which can last weeks (at least one month) or even months, the sausage loses moisture and gains flavor. It is very important to respect the times and not force the drying, as this is where the product transforms.

  1. Meat selection and mincing: The cleanest and juiciest parts of the pork are chosen, then finely minced carefully.

  2. Mixing with spices: Paprika, salt, and the rest of the ingredients are added, and everything is mixed for a long time until a homogeneous mass is obtained.

  3. Resting the mass: The mixture is left to rest for 12 to 24 hours so that the flavors integrate.

  4. Stuffing into natural casings: The mass is stuffed into casings and tied manually.

  5. Curing in drying rooms: The sausage is hung in ventilated places with controlled temperature and humidity. This is where the magic begins and happens.
