What are fuet and secallona?

Fuet and secallona are two examples of typical cured Catalan sausage. Although they share many ingredients, they present clear differences in shape, texture, and flavor. Let's see what each one is like.

  • Fuet is a long and thin sausage, about 30-40 cm, stuffed into natural casing, covered by a white layer on the outside. Its texture is tender, with a softer curing point, ideal for those looking for a juicy and aromatic bite.
  • Secallona, on the other hand, is thinner, shorter, and is usually presented without the white outer layer. It is much more cured than fuet, so its texture is dry, firmer, and its flavor more intense. It is usually cut by hand and chewed slowly to savor all its nuances.

How is each sausage made?

Nutritional differences

While both sausages share the same meat base, the difference between fuet and secallona originates mainly from the degree of curing and water loss. Unlike fuet, secallona is more cured and dry, which implies a higher concentration of nutrients and energy.

The data and curing method allow us to estimate that, due to its lower water content, secallona is more concentrated in calories, fats, proteins, and salt than fuet.

  • More proteins: If a fuet has 27g of protein, secallona, being dehydrated, could provide between 28–30g of protein per 100g.
  • More calories and fats: With less water, both fats and calories will be significantly more concentrated. In a realistic estimate, it can reach 460–500 kcal per 100g, with total fats exceeding 35g.
  • Few carbohydrates: Fuet has 2.6g of carbohydrates (sugars), while in secallona they are usually equally low or even lower, due to the absence of added sugars.
  • More salt: Due to the higher percentage of dry matter, salt is also concentrated, potentially exceeding 4g per 100g.
